Kelly’s passion for events began early. Raised on Cape Cod, she entered the wedding industry at 18, gaining hands-on experience alongside top New England vendors and distinguished clientele. After earning her Bachelor’s degree in Hospitality Event Management, she brought her expertise to Nashville, producing high-profile events for country music legends and A-list celebrities while collaborating with the city’s leading planners and creatives.

After producing hundreds of weddings and notable events, Kelly found her professional home at Mint Springs Farm. Today, as owner, she brings a guest-first approach, thoughtful design, and seamless execution to every celebration. She has produced more than 400 Nashville weddings, many at Mint Springs Farm, and is known for her calming presence, strong leadership, and commitment to creating the most unforgettable experiences.

Outside the farm, Kelly is a proud mama to a spunky, full-of-life toddler. When she is not onsite, you can find her at hot yoga, cheering on her New England sports teams, or enjoying a well-earned glass of wine.

Dede Scheibe

Sales Director

Dede has been working in the event industry in the Nashville area since early 2009. With a background in finance, she started managing the finances for one of the oldest event companies in Nashville. Quickly however, the allure of planning events took root. By 2013, she was the company’s General Manager and Lead Wedding Planner.

Fast forward to today. While Dede still enjoys planning the occasional event, joining the team at Mint Springs Farm as their Sales Director has been a dream come true. 

Her joy has always been connecting with prospective brides and helping them envision their wedding. Mint Springs Farm is an easy place to make this happen with its beauty and amazing staff and vendors.

Dede lives in Franklin with her husband of 36 years. They have three grown children and four grandchildren. When she is not meeting with brides at the farm or hanging out with her grands, she loves to travel, take walks, and read a good novel.

Courtney Jacobs

Event Planner/Designer

Born and raised in San Diego, Courtney has always been drawn to creating experiences that make people feel celebrated. That passion took shape in design school, where a final project designing an entire wedding venue revealed her calling in the wedding industry. She went on to blend her background in interior design with hands-on experience in event catering, naturally stepping into wedding planning and combining her love of design, organization, and unforgettable moments.

A few years later, Courtney's path led her to Nashville, where she discovered Mint Springs Farm and immediately knew it was where she wanted to grow. Joining the team as a Wedding Planner and Event Coordinator felt like a natural next step, allowing her to pour creativity, care, and intention into designing meaningful celebrations in a place she truly loves.

Outside of weddings, she can often be found at music festivals, planning spontaneous trips, styling outfits for any occasion, or organizing weekly gatherings with friends. She is also always on the hunt for the best dirty martini in the city, with Sinatra’s currently holding the top spot.

Allie COODE

Event Planner/Designer

From a young age, Allie found joy in the little things, like helping her mom set the table for dinner. That early spark grew into a love for arts and crafts, where even the simplest school projects became thoughtful, over-the-top creations. By high school, she was the friend planning every gathering and organizing each celebration. In college, Allie participated in the Disney College Program, where she discovered a true passion for creating magical guest experiences. All of these moments naturally led her to the wedding industry, a path that has felt like the perfect fit ever since. With more than nine years of experience, wedding planning has become both her passion and her purpose.

Allie’s favorite Bible verse is John 10:10: “I have come that people may have life and have it to the full.” She carries this philosophy into every wedding she plans, believing her clients should experience their day fully, surrounded by love, joy, and unforgettable moments.

Emma Gibson

Event Planner/Designer

Emma is Memphis raised and a graduate of the University of Tennessee at Chattanooga. She began college studying graphic design but quickly realized she was drawn to more creativity, collaboration, and personal connection. Leaning into what she loved most, Emma found her path in planning and designing meaningful events that make people feel truly celebrated.

Her passion led to a summer internship at a Memphis wedding venue that grew into a two year role, followed by joining a wedding planning team during her senior year in Chattanooga. After graduating, Emma joined Mint Springs Farm as an Assistant Wedding Planner and was later promoted to Wedding Planner and Event Coordinator. Today, she blends hands on venue experience with full service planning, bringing both creativity and organization to every celebration.

Outside of Mint Springs Farm, Emma can usually be found online shopping, traveling with friends, watching all things Bravo, planning her next outfit, and cheering on her team. Roll tide!

Jim & Jared

Property Operations Team

Jim and Jared are the backbone of Mint Springs Farm. From mowing and landscaping to hedging, lighting installs, painting, and ongoing property maintenance, they handle it all with care and precision. On wedding days, they take on the heavy lifting, flipping spaces seamlessly to keep celebrations running smoothly behind the scenes.

If something needs fixing, adjusting, or improving, Jim and Jared are already on it. Their hard work, attention to detail, and dedication are what keep Mint Springs Farm looking its absolute best. Simply put, the farm would not be what it is without them.
